Mantaray’s Bar & Brasserie is located in the heart of Mantarays Ningaloo Beach Resort offering breakfast, lunch, dinner, room service and a variety of events, weddings, groups and conference menus.
The Head Chef is responsible for all aspects of food and catering, prepares & cooks professional food/dishes for other people and is proficient in all aspects of food preparation, quality control and presentation, as aligned to a commercial kitchen in the hospitality industry. The Head Chef is also part of the small onsite Management Team at the resort and works cohesively with the team to achieve the successful operation of the business.
MNBR is a 68-room boutique resort located metres from the waterline in Exmouth, Western Australia (1270km from Perth). Exmouth is the gateway to the World-heritage listed Ningaloo Reef and the Cape Range National Park.
The Role
Duties will include but not be restricted to:
- Ability to foster and promote a safe, friendly and inclusive working environment for the Kitchen team and effective integration and working relationship with other departments of the resort.
- Possess the personality, attitude, and ability to continue to foster and build on the very good team dynamic within the existing Kitchen team.
- Ensure all Health and Safety legislation and guidelines are implemented, adhered to and regularly reviewed, in respect of kitchen production, employees, machinery, equipment and hygiene.
- Cooking and presentation of foods for breakfast, lunch, dinner and functions/events.
- Ensure all dishes are served at the correct portion size, quality and temperature.
- Ensure all products used are of a high standard.
- Produce all dishes to a high standard, following presentation and recipe guidelines to guarantee consistency and quality of the product.
- Supervise, train and coordinate the activities of Chefs, Cooks, Apprentices, Kitchenhands or other food preparation workers.
- Manage the day-to-day requirements of staff members, including rosters, timecard submission, new employee starter packs and induction training.
- Oversee the cleaning of all areas before, during and after service
Skills and Experience

- Relevant Trade qualification in Commercial Cookery (equivalent recent experience will be considered on a case-by-case basis)
- Recent & relevant experience in a busy restaurant environment, at a similar level.
- Competency with cost control and stocktake.
- Proven consistency of service and quality of the product.
- Knowledge and adherence to relevant OS&H and food safety regulations.
- Ability to foster and promote a safe and friendly working environment.
- Willingness to work on a dynamic roster system based on business needs, including working nights, weekends, school holidays, public holidays and split shifts.
- Maintain a high standard in personal presentation and kitchen cleanliness standards.
- Be a permanent resident of Australia or already hold the necessary immigration status to work in Western Australia for an extended period.
- Hold a current Australian Driver’s Licence (without restrictions).
