After working in Michelin restaurants in France for 16 years, UK-born Toby and wife Maree, a pastry chef who grew up on a farm outside Perth, headed to the Coral Coast in search of life/work balance. The
couple make their dishes from scratch from local ingredients, including grassfed beef from the station, to serve at long tables.
