About the Role

We’re looking for a Head Pastry Chef to lead the pastry function across our precinct. You’ll be the creative and technical driving force behind our dessert offering — from Cape Arid Rooms’ high tea program (sweets, savouries, pastries, sorbets and ice creams) through to event and function catering, private dining, and the SHOP 1875 retail pastry and cake offering. You’ll also lend your expertise across our other kitchens, POST Osteria & Bar, Petition Kitchen, Wildflower, and Long Chim supporting their pastry and dessert programs as needed.

This is a hands-on leadership role: you’ll be producing exceptional product daily while building and mentoring a team around you.

Key Responsibilities

  • Lead the preparation, production and presentation of pastries, desserts, cakes and slices to the highest standard across all venues
  • Drive consistency in quality, appearance and taste across a high-volume, multi-outlet operation
  • Develop, coach and mentor kitchen team members
  • Manage food cost, wastage, portion control and stocktake processes within your section
  • Partner with the Director of Culinary and Post Head Chef on menu development, food costing and rostering
  • Champion WHS and HACCP compliance, and maintain rigorous hygiene and food safety standards
  • Be a visible, professional role model for grooming, conduct and guest-focused service

About You

  • Proven experience as a Pastry Chef or Head Pastry Chef in a high-volume, high-quality hospitality environment
  • Strong technical pastry, dessert and chocolate skills, with a passion for menu innovation
  • Experience leading and developing a team
  • Sound understanding of food cost control, stock management and WHS/HACCP requirements
  • A collaborative, hands-on leader who thrives in a fast-paced, multi-outlet environment

Salary: $83,200 P.A + Super
