Il Lido is seeking an experienced and commercially minded Head Sommelier to lead and evolve one of Western Australia’s most highly regarded wine programs. This is a senior leadership role with full accountability for the direction, performance, and continued growth of the beverage offering.
Located on picture-perfect Cottesloe beach, Il Lido comprises a highly awarded Italian canteen and wine bar alongside a high-volume espresso operation. Following its recognition as Australia’s Best Italian Wine List at the 2025 Australian Wine List of the Year Awards, the program is firmly established as one of the leading Italian wine lists in the country. The list spans benchmark Italian producers, emerging regions, and a deep and considered Australian and WA selection, supported by an extensive aperitif, amaro, and dessert offering.
The successful candidate will be responsible for:
Owning and evolving the wine program, including range, pricing strategy, and supplier partnerships
Driving commercial performance across the beverage category, including margin, stock control, and inventory optimisation
Leading, mentoring, and developing the floor team’s wine knowledge and service standards
Embedding a strong wine culture within the venue, ensuring consistency and confidence at every guest touchpoint
Working closely with the General Manager and leadership team on strategy, activations, and ongoing growth of the business
We are seeking a confident operator with strong commercial acumen and a deep passion for Italian wine. You will bring a balance of technical expertise and practical execution, with the ability to lead from the floor while maintaining discipline across administration, purchasing, and systems.
This role offers a high degree of autonomy and is suited to someone ready to take full ownership of the flagship wine program within the portfolio.
Our ideal candidate will bring:
Strong knowledge of Italian wine and cuisine
Proven experience in a senior sommelier role within a premium, high-volume environment
Advanced certification (WSET Diploma or CMS Advanced preferred, but not essential)
Strong financial and operational understanding, including stock and cost control
Excellent communication and leadership capability
