MAIN DUTIES/RESPONSIBILITIES
Chef directly responsible for all kitchen functions including food purchasing, preparation & maintenance of quality standards, sanitation & cleanliness.

Lead, mentor & manage kitchen staff
Develop & plan menus, including reactive cooking with ingredients fished by our guests on the boat
Create meals giving an exceptional guest food experience with & eye to detail
Food quality control
Create prep list for the kitchen crew
Manage food costs & inventory
Liaise with Suppliers for food orders
Maintain standards for food storage, rotation, quality & appearance
Directly responsible for all kitchen functions
Ensure compliance with applicable health codes & regulations
Interacting comfortably with all manners of clientele & crew
SKILLS & EXPERIENCE
Qualifications

Relevant formal certifications (e.g. Certificate IV in Commercial Cookery / Kitchen Management or equivalent)
Cruise ship safety training certifications essential including 1st aid, fire suppression, offshore safety (e.g. BOSIET; STCW)
Experiences

At least 3 years of direct proven experience as Chef in a full sit-down restaurant
At least several months of Cheffing on a vessel (anywhere)
Excellent experiences in fresh fish & desserts highly valued
Skills

Capacity to work on a vessel (sea motion)
Capacity to work for up to 12 days in a row in a high pressure context

Creativity and a flair for foods / ability to create dishes or specials

PERFORMANCE GOALS
Being able to successfully cater for up to 46 people, 3 meals a day, morning tea & afternoon tea platters for up to 12 days at a time.
Receiving satisfaction and praises from guests whilst on charter
Receiving positive feedback as per our Guest feedback forms
