Unique opportunity to launch an authentic accommodation and food & beverage precinct on Rottnest Island, Western Australia.

We are seeking a dynamic and experienced Food and Beverage Manager to oversee all aspects of our hotel’s dining establishments. The ideal candidate will be passionate about delivering exceptional culinary experiences and possess strong leadership skills to effectively manage our food and beverage operations.  This is a pre-opening role for an exciting new venture in the heart of Wadjemup, Rottnest Island.

Locally owned, The Lodge Wadjemup is being delivered by a carefully curated team of local Western Australian talent, featuring world-class Western Australian architects, development managers and designers alongside the very best in food and beverage, hoteliers, culture, tourism and brand and communications – we intend to make a lasting, positive and compelling part of Wadjemup and its status as a cultural tourism hub.

Redeveloping the existing lodge site, the precinct will offer varied accommodation for all types of visitors, with 109 rooms ranging between comfy bunk rooms through to larger family rooms with a bit more space. There will be lakeside and Island views and a pool area for guests.

Open to all Rottnest Island visitors, at the heart of The Lodge Wadjemup will be Sunset Bar & Dining, a relaxed, Mediterranean inspired venue open for breakfast through til late, serving great local beer and wines, and a simple, delicious seasonal menu.  The Pelican will serve artisan coffee and gourmet soft-serve ice-cream. A 200pax capacity function and events facility will open in stage 2 of the hotel redevelopment, providing an unique space for events on the island. All will be open 7 days a week.

Reporting to the newly appoint General Manager (who recently led the launch of the best-in-class The Calile Hotel in Brisbane), we are seeking a talented, dynamic, and enthusiastic Food and Beverage Manager to join our team.

 

The role includes:

  • Develop and implement strategies to maximize revenue and profitability for all food and beverage outlets.
  • Ensure the highest standards of food quality, presentation, and service are maintained at all times.
  • Oversee menu planning, pricing, and promotional activities to drive customer satisfaction and increase sales.
  • Manage inventory levels and control costs by monitoring expenses and implementing cost-saving measures.
  • Recruit, train, and supervise staff, fostering a positive work environment and providing ongoing coaching and development.
  • Maintain compliance with health and safety regulations and ensure proper sanitation practices are followed.
  • Collaborate with other departments to coordinate events, functions, and special requests.
  • Handle guest inquiries, feedback, and complaints promptly and professionally, striving to exceed expectations.

 

A few things you’ll need to have to thrive in this role:

  • Minimum of 5 years of experience in a similar role within the hospitality industry.
  • Proven track record of successful leadership and management in a high-volume food and beverage operation.
  • Strong knowledge of food and beverage trends, industry best practices, and local market dynamics.
  • Excellent communication, interpersonal, and problem-solving skills.
  • Ability to work effectively under pressure and adapt to changing priorities.
  • Proficiency in Microsoft Office and restaurant management software.
  • Certification in food safety and sanitation preferred.
